Could someone tell me if a Western Digital 30GB EIDE ULTRA-ATA/100 5400RPM hard drive would work in an iMac. The original HD died and needs to be replaced, and I've been trying to find a low-cost, relatively low capacity drive for it.

Yes. It will work. If you have an older iMac (Rev A, B or C), be sure to partition the drive to use an 8000MB partition first for use as the boot drive and the remainder for other uses. The older iMac's won't boot unless the entire boot partition is in the first 8GB of the drive.
